San Domenico Palace
San Domenico Palace occupies a former 14th-century convent on a rocky promontory above Taormina, converted by Four Seasons, with its terraces looking across the Bay of Taormina to Mount Etna. It is the highest-rated hotel in this guide on Booking.com.
Its private-pool category is the Sea-View Executive Suite with Plunge Pool, in the Grand Hotel Wing – a separate living area opening onto a generous terrace built around a private plunge pool, with Etna in the view.
Everything else in the house uses the clifftop infinity pool, which is shared. So the pool question here comes down to one named category.
The setting is the argument. Taormina's old town is a walk away, though a steep one in places, and the Greek theatre is minutes from the door.

DORIC Eco Boutique Resort and SPA
DORIC is a 28-room eco-boutique resort on a hillside above Agrigento, looking down over the UNESCO Valley of the Temples with the Temple of Juno in the view and the Mediterranean beyond it. It is set among olive trees, pistachio groves and a historic vineyard.
Five of its rooms are Villa Suites with a private heated pool – 50 m² for two guests, with two extra beds available, and the pool positioned to face the temples. A sixth villa suite has a Jacuzzi on a large terrace rather than a pool, which is worth knowing before you book by name.
Five units in one category is unusual on this island, where the pool is normally a single suite you either get or you don't. DORIC is also the best-rated of the three on Booking.com, from a considerably larger review base.
The rest of it is small-scale rather than grand: an outdoor pool with a swim-up bar overlooking the temples, a panoramic spa with hydromassage, saunas and steam baths, and the Ambrosia restaurant cooking from the resort's own farm. The resort generates its own water and renewable energy.
Practically, it sits about two kilometers from the Valley of the Temples, six from central Agrigento, and 15 minutes from the Porto Empedocle ferry to the Pelagie islands.

Verdura Resort
Verdura spans 230 hectares of coastline, countryside and golf on Sicily's southwest coast near Sciacca, with 203 rooms, three golf courses, a private beach and a thalassotherapy spa. It is a resort you settle into rather than a base for touring.
Its confirmed private-pool category is the Two-Bedroom Pool Suite – 112 m², opening onto a terrace with its own pool.
Do not confuse this with the Rocco Forte Private Villas, which are a separate product on the same estate: 20 units with private pools, sold through Rocco Forte directly and specialist agents rather than the hotel's OTA inventory. The links in this guide go to the resort, not the villas.
The scale is the difference from the other two. San Domenico Palace is a clifftop hotel in a famous town; DORIC is 28 rooms on a hillside. Verdura is a self-contained estate where a week disappears without leaving the property.
Sciacca is roughly two hours from either Catania or Palermo, which makes this the least convenient of the three to reach and the most sensible for a long stay.

Several of Sicily's most famous hotels are listed elsewhere as private-pool properties and are not. Belmond Grand Hotel Timeo's Presidential Suite has a Jacuzzi rather than a pool, and Villa Athena at Agrigento is built around one shared pool. Three hotels, three coasts, three separate trips
The practical fact this guide turns on is distance. Taormina sits under Etna on the east coast; Sciacca is on the southwest; Agrigento is on the south between them. Two to three hours of driving separates any pair.
That makes each a different holiday. Taormina is the touring base – Etna, the Greek theatre, Syracuse and the Baroque towns within reach. Agrigento is archaeology, with the Valley of the Temples effectively at the end of the drive. Sciacca is the one where you do not leave the resort.
It also means the airports differ. Catania (CTA) serves Taormina in about 45 minutes. Palermo (PMO) or Catania both reach Verdura in roughly two hours. Agrigento is about two hours from Palermo and a little more from Catania.

When to go
May–June and September–October are Sicily's best months for a private-pool stay: warm enough for daily pool use on all three coasts, without July and August's heat, crowds and pricing.
July and August get genuinely hot inland and on the south coast, which is when a private pool stops being a luxury and starts being the reason the day works.
Winter is mild on the coast but too cool to build a trip around a pool, and some smaller properties reduce services out of season.
Elsewhere in Italy, Costa Smeralda has the country's deepest private-pool inventory, the Amalfi Coast has only two qualifying hotels, and Lake Como and Tuscany cover the north and the interior.
